In one of my blogs I told you I would make an eggplant dessert and I did! This is a picture of mini eggplant pancakes covered in sugar. They were so good!!!!!!!!!!!!! First my mom cut the eggplant in to slices. Then she dried the eggplant. After that she dip the eggplant in the pancake batter and fried it. Then drained the oil and then rolled in sugar. It is best to eat them right away while they are still crunchy.
