I know it has been a while since I last wrote. I don't have any eggplants. I gave my last few to the neighbors. This is a picture of my garden. I'm also growing tomatos and peppers and jalapenos. My mom has a little garden too. She planted watermelons and cantaloupe and pumpkins. They have flowered but still no fruit.

Inspired by Marilyn's comment on my last blog entry I decided to look for some dessert recipes. I found some eggplant desserts they are called Eggplant cake, Eggplant french toast style, Melanzane Al Ciccolato (Eggplant layered with riccota and chocolate), and Fried eggplant with sugar. At this point I ran out of eggplants but when I get some more I'll try a recipe. THANK YOU MARILYN FOR THE INSPIRATION!!!

Eggplants can be very cheap, in fact We had Fried Eggplant, Eggplant Parmesan and meatballs for less than 10 dollars. It fed a family of five! That's a lot of people too. Some dinners can cost more than 10 dollars to feed one person! That saves money in this tough economy. It tasted amazing!!!!

The eggplant is packed with vitamins. Such as vitamin A, vitamin C, vitamin E, vitamin K, Niacin, vitamin B6, Pantothenic Acid. The eggplant has many minerals such as Calcium, Iron, Magnesium, Phosphorus, Potassium, Sodium, Zinc, and Copper.
