Inspired by Marilyn's comment on my last blog entry I decided to look for some dessert recipes. I found some eggplant desserts they are called Eggplant cake, Eggplant french toast style, Melanzane Al Ciccolato (Eggplant layered with riccota and chocolate), and Fried eggplant with sugar. At this point I ran out of eggplants but when I get some more I'll try a recipe. THANK YOU MARILYN FOR THE INSPIRATION!!!

Did you know an eggplant is very low in fat and has no cholesterol. It has 2% of your recommended daily carbohydrate plus 11% of your daily fiber too. It has 2% of your daily protein. The eggplant is packed with vitamins. Such as vitamin A, vitamin C, vitamin E, vitamin K, Niacin, vitamin B6, Pantothenic Acid. The eggplant has many minerals such as Calcium, Iron, Magnesium, Phosphorus, Potassium, Sodium, Zinc, and Copper.
