Inspired by Marilyn's comment on my last blog entry I decided to look for some dessert recipes. I found some eggplant desserts they are called Eggplant cake, Eggplant french toast style, Melanzane Al Ciccolato (Eggplant layered with riccota and chocolate), and Fried eggplant with sugar. At this point I ran out of eggplants but when I get some more I'll try a recipe. THANK YOU MARILYN FOR THE INSPIRATION!!!

    how is the catterpillar infestation? Have you gotten any other vegies from your garden? I've never fixed eggplant, although, when I go to Olive Garden I always order the Eggplant Parmigiana. Hmmmm, I might have to try one of the dessert recipes....
