Eggplants can be very cheap, in fact We had Fried Eggplant, Eggplant Parmesan and meatballs for less than 10 dollars. It fed a family of five! That's a lot of people too. Some dinners can cost more than 10 dollars to feed one person! That saves money in this tough economy. It tasted amazing!!!!

I watched a Chopped program on Food Network last night about 8:00 and the desert items in the basket were a loaf of white bread, honey, egg plant and oh! I can't recall the other item anyway they each made a different desert, I like watching that show, it interesting to see what they can come up with the items given them.
I could never dream up the things they do in such a short time.
