In one of my blogs I told you I would make an eggplant dessert and I did! This is a picture of mini eggplant pancakes covered in sugar. They were so good!!!!!!!!!!!!! First my mom cut the eggplant in to slices. Then she dried the eggplant. After that she dip the eggplant in the pancake batter and fried it. Then drained the oil and then rolled in sugar. It is best to eat them right away while they are still crunchy.

I know it has been a while since I last wrote. I don't have any eggplants. I gave my last few to the neighbors. This is a picture of my garden. I'm also growing tomatos and peppers and jalapenos. My mom has a little garden too. She planted watermelons and cantaloupe and pumpkins. They have flowered but still no fruit.

Inspired by Marilyn's comment on my last blog entry I decided to look for some dessert recipes. I found some eggplant desserts they are called Eggplant cake, Eggplant french toast style, Melanzane Al Ciccolato (Eggplant layered with riccota and chocolate), and Fried eggplant with sugar. At this point I ran out of eggplants but when I get some more I'll try a recipe. THANK YOU MARILYN FOR THE INSPIRATION!!!

Did you know an eggplant is very low in fat and has no cholesterol. It has 2% of your recommended daily carbohydrate plus 11% of your daily fiber too. It has 2% of your daily protein. The eggplant is packed with vitamins. Such as vitamin A, vitamin C, vitamin E, vitamin K, Niacin, vitamin B6, Pantothenic Acid. Just when you thought Eggplant Insanity was over - it gets more INSANE. Look at the size of this thing!!!!! It's huge. Believe it or not it's an eggplant from our garden. It's called a Black Beauty. The plant usually fruits every 10 to 14 days. They can grow up to 6 inches in diameter. They can weigh 1.5 pounds. One fruit can feed a family of four. Tonight we might have Eggplant Parmesan for dinner.

IT'S A BOY it doesn't have a lot of seeds so it's a boy!!! This is my last eggplant insanity blog. I had a wonderful time making it. Thank you for being followers of my blog. Day 3: This is my eggplant. It has gotten WAY bigger but, I don't want it to be just big. I want it healthy too. Here are some possible diseases and tips on how to keep your eggplant healthy.
Aphids are bugs that mostly gather on leaves and on stems of an eggplant. They can fall off with a strong blast of water or when sprayed with insecticidal soap. (Be sure to read the instructions!) Another good way to get rid of them is to let lady bugs eat'em. To them they are delicious!
Mites are usually a problem that people don't notice until it's too late. Mites are so small that you need a magnifying glass to see them. They prefer hot dry climates. They kill the plant by sucking the juices out of it. The leaves will turn in to a yellow color. To get rid of them wash with water for about a week or use insecticidal spray. (Be sure to read the instruction!)

Day 2: This is day two of my blog about eggplants. As you can see it hasn't grown much. So I did research on when you should pick an eggplant, I learned that the eggplant should be a dark purple and shiny. When you squeeze the eggplant it should be firm. If you leave the eggplant on the stem to long it will be dull, squishy ,and leathery. Feel free to recommend recipes.
